I began my vegan journey almost a year ago. I was diagnosed with a heart condition and after much research I decided to try alternative methods to improve my quality of life. While reading various blogs, I learned about the video, “Forks over Knives” and it changed my life! I immediately wanted to learn more about this new way of eating and started reading books like The China Study , How Not to Die, How to Prevent and Reverse Heart Disease and The Starch Solution.  I was given hope again! When I found out that instead of having to give in to the prospect of living a life with disease and taking medication, I could have QUALITY of life, health and happiness via the food I chose to put in my body, I was sold.  I decided to try it and jumped in with both feet!  

I started eating whole food plant based with no added oils and although it was an adjustment, I have never felt better and wish I had learned this way of eating years ago.  I had no idea that I could eat such a large variety of delicious foods! Letting go of dairy was the hardest but now it has almost become a hobby to try to prepare foods that I once felt I would never be able to let go of. I have learned that you can even make delicious plant based cheeses that rival the high fat versions and now I can enjoy “Pizza Friday” again along with my family. I am currently following the McDougall diet and am working my way through various cookbooks that I now own. I will be reviewing those recipes here on my blog and hope you will follow along on my journey to better health! 

I will try to give my thoughts on what recipes I thoroughly enjoy and those that I have found need adjusting (for my taste). I also want to post reviews of books and products that have made cooking this way so much easier, and new food items I have found that are WFPB and oil free. It can sometimes be hard to find these foods but more and more grocery stores are carrying them now and I will be sharing what I find and where YOU can go to find them too!  I am glad there are so many wonderful options available today to be able to eat this way! 

I would also welcome any suggestions on future post topics you would like to read about. This way of life and eating is fairly new to some people and like me, it can be somewhat intimidating and hard to know where to go to find the resources to help make this way of life easier. I hope this blog will help you in YOUR journey to better health!
